I was browsing Pinterest one day and came across Gimme Delicious‘ Avocado Tuna Salad recipe. I immediately had to try it out and I was not disappointed! It’s so easy to make, there is no cooking involved, and it’s pretty dang good for you, too! It has become one of my staples and I make it quite often. It’s low carb and keto-friendly if you’re wondering.
Ingredients
- Tuna in Water
- Avocado
- Sweet White Onion
- Celery
- Green Onions
- Light Mayo
- Parsley
- Pepper
To Make
Drain your can of tuna and put it in a large bowl once you’ve gotten as much water as possible out. Then time to add your extras. You can really add any vegetable of your choosing, but these are my go-tos. I especially love the celery, onion, and green peppers for the crunch! The photos I took last night don’t have the celery or green pepper, though, I made this on a whim and did not have them handy.
I still use a little bit of light mayo, too, since I just love mayo, but that’s up to you. If the avocados are ripe, they will create the consistency we want even without the mayo. Once everything is in your bowl – stir, stir, stir! That’s it! Only about 10 minutes total and you have a healthy, high-protein meal. I usually eat it as is, but feel free to make a sandwhich or something, too. If you want to store it in the fridge and eat some later, I usually spritz a little lemon juice on it so they avocado doesn’t go brown on me.
