Easy, tasty, and healthy? Sign me up! I found this on the Minimalist Baker while I was searching for some thyroid-friendly recipes and adapted it a bit from there. I like eating this at night as a dessert, it’s a bit rich for me in the morning, but you could totally throw some fruit and oats on top either way. This is vegan and gluten free, too!
Ingredients
- 1/4 cup cacao powder
- 4 tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1 pinch salt
- 1/2 tsp vanilla extract
- 1/2 tsp orange juice
- 1 serving of protein of your choice (I used vanilla)
- 1 1/2 cups unsweetened almond milk
- 1/2 cup chia seeds
To Make
Start with your cacao powder, maple syrup, ground cinnamon, salt, protein powder, orange juice (my friend recommended and swore by this), and vanilla and whisk to combine. Then add a little almond milk at a time and whisk until it thickens. Then add the rest of the almond milk and whisk until smooth. It might seem like it takes a while and some finessing, but I promise it’ll get there!
Add your chia seeds and whisk again until the consistency is even. I like to pour mine into four 8 oz mason jars with a lid to store overnight in the fridge. They should last around 4-5 days. Eat chilled as is or with some of your favorite toppings like fruit, granola, or even whipped cream.
