The other week when I was at Aldi’s I spotted some pumpkin sage ravioli and instantly needed to try it. I love all things squash, so this sounded great (and easy to make). Then as I continued my way down the aisle, I saw pumpkin spice goat cheese. Okay, I was intrigued. This could be amazing or absolutely disgusting, but I had to find out.
I got home and decided I’d make the ravioli that night and noticed I had some unopened pumpkin wine in my fridge. It was then and there that I had the idea to make the most basic meal I’ve ever heard of… pumpkin everything. Why not?!
For the ravioli, I used a tomato basil pesto mixed with a little of that pumpkin goat cheese as the sauce. I wanted to spice it up a bit and sprinkled just a tiny amount of cinnamon on top, as well. I must say, I was quite impressed! The goat cheese was really good, as well. I really didn’t know what to expect with that one, but it was very tasty. The wine was a bit too sweet for my liking, but still pretty good.
